Serves 2 1 large steak (1.5 lbs) 3 cups cous cous 4 tablespoons olive oil 1 tablespoon Djon mustard 2 tablespoon balsamic vinegar 1/2 clove crushed garlic 1/2 juice lemon fresh Thyme chopped
Cook the cous cous by placing in a bowl with boiling water to cover the cous cous, then put a lid on and rest for 5 minutes. Meanwhile sear the steak on each side for about 3-4 minutes on each side. Make your dressing with all the remaining ingredients. Pour half of the dressing over the cous cous and mix in well, slice the beef and serve over the cous cous with the remaining dressing.
