Ingredients: 1 bunch of kale 1/2 onion 1 package of shiitake mushrooms 1 avocado 2 Tbsp toasted sunflower seeds 2 Tbsp toasted pumpkin seeds 1/3 cup lemon juice (juice from 1 lemon) 1/3 cup Bragg's Liquid Aminos 1/3 cup Cub extra virgin olive oil
Directions: 1) Remove the stem from each kale leaf and then cut the leaf into ribbons 2) Slice onion into little "smiles" 3) Pull stem off of the mushrooms and slice those into "smiles" 4) Slice avocado in half, remove the pit, and while the fruit is still in the skin, slice it up and then using a spoon, scoop it out directly into the salad 5) Put seeds in a nonstick skillet on medium heat for about 5 minutes. You'll know they're done when you can smell them. Shake them up occasionally. 6) Put all of the above ingredients into a large bowl 7) For the dressing, whisk together the lemon juice, liquid aminos and olive oil. Pour over salad. Toss and serve with a smile of your own.
